Biscuits, Baby

The weather is cooling way down here and it officially feels like fall which means I’m thinking of any excuse at all to get my butt in the kitchen. I’ll be honest and say that this summer I wasn’t feeling all that inspired when it came to cooking or baking. I felt kind of lazy and it was too hot to bother turning on the oven and blah blah blah. Now I’m thinking about pies and soups and muffins and good ol’ comfort food. And what’s more comforting than biscuits, am I right?

Full disclosure: I am not from the south and I don’t really have any experience when it comes to southern food, except that I know I like to eat it! So rather than try (and fail) to make my own biscuit recipe, I decided to let someone with a little more experience take the lead. I used this recipe by Meaghan from Cook. Craft. Love. and I have to say I’m really happy with how it all turned out! For a first time biscuit baker I’m pretty darn proud.

Meaghan has some really helpful tips (like to refrigerate your biscuits before baking) and this simple biscuit recipe is a dream. I will add that I used my hands to cut the butter and also to mix in the milk because I found that to work the best, just be careful not to overwork the dough. Serve ’em warm with butter and honey (my personal fav) or use them as a vessel for the ultimate breakfast sandwich! Whatever you choose to do, let me know in the comments how they turn out!
